Yes Ma’am ~ Simple Healthy Recipe: Green/Red Peppers with Pork and Rice, Mangos & Baby Spinach

So the other day I whipped up a tasty recipe. Usually I try to find some recipes online and cook them but lately I have just been makingthings from scratch recipes seeing if they taste good. Now this simple dish came up with came together perfectly and the most work I had to do was standing in the kitchen and cutting things up. I like to keep everything nice and simple while yet delicious and lately I have been trying to eat healthy…so far Im doing great :D.

Ingredients:

– Jasmine Rice (Organic)

-1/2 Red bell pepper chopped (Not the hot kind)

-1/2 Green bell pepper chopped (Not the hot kind)

-1 Whole Onion chopped

-1 slab of pork chop chopped up

– Extra Virgin Olive Oil

– 1 Whole Mango

– A hand full of Organic Baby Spinach

– A pinch of Salt (optional)

-Pepper

Directions:

  • Chop the onion, red & green bell pepper and the pork chop. Season with salt & pepper. I only used a pinch of salt, (Im not a salt fan) and sprinkle a little pepper.
  • Next heat up your skillet on medium. Pour as much olive oil as you think you may need. Wait until the oil is hot then pour all of your ingredients into the skillet. After about 5 minutes or so stir the ingredients the put the cover over the food. (This was you make sure the pork chop is completely cooked and the vegetables don’t burn.)
  • Occasionally stir the food. After about 15 or 10 minutes it should all be ready.
  • While you’re waiting for the food to finish lets put on the rice. If you don’t know how to cook rice, don’t worry I’ll teach you :). (I don’t have a rice cooker..well I do but I don’t use it.)
  • Pour as much rice as you want but not a lot to the point where its too much or reaches the pots rim. If you want a lot then pour it to the middle of the pot. Then pour some cold water with the rice. At this time it doesn’t matter how much water you are pouring because the rice needs to be cleaned. Stir the rice up with your hand or a spoon then pour out as much water as you can without the rice falling out. Repeat this until the water is clear or you feel sure it is clean enough. Then pour enough water to where it is about a inch over the rice. Heat the stove on high and put the rice on.  MAKE SURE TO KEEP AN EYE ON THE RICE. When the rice water comes to a boil turn the heat down to its lowest and put the cover over the rice. In about 10 or 15 minutes the rice should be done.
  • If the food still isn’t ready then clean all those dirty dishes you made while you’re waiting. Wash your hands, get your plating ready and check the food.
  • If the food still isn’t ready then get out your mango. Make sure to rinse it off. Then begin to peel or cut your mango up. (I cut mine). Put as much mango as you want on your plate.
  • Afterward grab a handful of baby spinach, make sure that you rinse it off. Put on the plate.
  • After the food is done put as much rise as you want on your plate. Then add the pepper, onion and pork chop mix at the top and wah la! You have a simple meal for lunch breakfast or dinner…or all day! Theres about 4 or 5 servings worth for this dish.

Therefore it will fill you up easily and it wouldn’t be harmful to you like eating a hamburger because of the simple fact that majority of it is made up of water. Ever since I read that I have ALWAYS purchased watermelon as my primary fruit. So when I saw this photo it came naturally to me for me to post it 😀

Healthy Recipe: Cucumber, Watermelon & More

So heres a little recipe. I’ll be posting more recipes according to what I buy weekly. I am trying to eat healthy more so when I Juicy ripe watermelons, creamy avocado, annnnnddd lime + cilantrgo shopping I buy what I like then when I get home I just look up recipes I can try to match the food I bought and if that fails I can just eat the food by its self :D. Its better than following a list of items and then going shopping to find something that matches and it saves me money because I know what I like.

Avocado, Watermelon, & Cucumber Salad

2 avocados, pitted and sliced or cubed

1 seedless watermelon, cut into 1 inch cubes

2 cucumbers, peeled and cut into 1 inch cubes

2 tablespoons fresh lime juice

1 tablespoon olive oil

1/3 cup freshly chopped cilantro

salt and pepper to taste

Directions

In a large bowl add avocado and drizzle with lime juice and olive oil and gently stir to coat. In a separate large bowl, toss watermelon and cucumber together. Add the avocado mixture on top of the watermelon and cucumbers. Sprinkle with cilantro and season with salt and pepper to taste.

My WeightLoss Journey

If you have seen my blog or if you glance through it now you will see a few categories/pages dedicated to weight loss. peace withinUnderstand this: I have been up and down with this whole weight loss thing and not because it is hard or because I don’t have time. Its really because my head is not in the right place. I’ll start my journey then I’ll stop. I start again and then I stop. Whenever I start its always a…abrupt, forceful push start. It does not come naturally. It is just something where I have been pushing myself to do it.

Right now I’m at the point where I do want to lose weight but I want to do it the right way. By the right way I don’t mean just eating right and exercising because I was doing ALL of that before. I mean I want my mind to be in the right place.

I realize now that this process goes much deeper than changing my appearance. When I begin to lose weight, its the beginning of change in every aspect in my life. Along with that change I need to know that I am ready and willing to apply that to EVERYTHING that I do. I shouldn’t have to push myself because I “need” to do it. I want to lose weight because I purely WANT to do it and it makes me happy. If it doesn’t make me happy then I just can not do it. The way I was doing it before only made me happy to see the results but not overall happy which was why junk food was so tempting or why I would easily forget that I’m trying to make a change in my diet.

So for now I’m not sure what I will be doing but I do know after my graduation has come and passed I will have a lot more time on my hands so then I can decide how I want to get my body right. I also have some books that I downloaded that have to do with positivity and discovering self. I’m hoping that will help me too along my journey. Some how I’m going to squeeze the Bible in there too. I told my friend last week that I want to get closer to God and I don’t attend church at all but I do pray…I would like to be able to talk to people that read the Bible or have a respectful perspective on the Bible and we can share our thoughts and prayers together.

Exercise/Eating Healthy Day 3..

Im just blogging about this so while I am out and about I can come to my blog and read what I plan to do for today…I may or may not make this a habit, we’ll see.

Right now my sister and I are trying to lose weight. We’re both using myfitnesspal and I downloaded insanity for her so I could upload it and she could us it. Right now she is ahead of me in the working out department by an hour and some minutes. We’re both struggling with eating.

Anyway, today I want to plan my meals a head of time even though I don’t know how it is going to workout when it comes to actually eating the food. I have some chicken egg foo yung left over from yesterday so I will eat that last today. I know its not the healthiest choice but Im a work in progress. I’ll cook myself a salmon in the morning and eat it then or later. I’ll eat some yogurt when I get home from work because I know I will be hungry. I dont think they give you any breaks so a snack will have to do that wont keep me from working. I’ll have to find a snack to take to work with me so I will have to stop by the store before I leave class and grab something on my way to wrk…gum included and OFC WATER. I probably will end up eating some baby asparagus too. Hopefully I can follow through with this plan. Since most of my day will be at school and work…It sounds like a good plan and Im going to try to actually stick to it. Then maybe I can squeeze in working out after I get home and finish my math homework.

Eating today:

  • Yogurt
  • Salmon
  • Chicken egg foo yung
  • Baby asparagus
  • Water
  • Stop by store and get a healthy/low calorie snack for work

***Update***

I would also like to say since I began this get fit get healthy thing in…march, I’ve lost 7lbs. You can see it on my progress report I update. So hurray for me but I have about a 90-100lbs to go 🙂

Healthy Dairies Week 1: Starting off Rough (Feb. 28 – Mar. 2)

February 28th

I have a tendency to walk into the kitchen just to look and see what’s there. Most of the time I don’t grab anything but if I do it is usually when I’m not hungry. So when I do begin to grab something or try to eat, I rub my stomach and ask myself if I’m really hungry.

I ate 2 pieces of watermelon before working out because I didn’t want to ruin my workout by eating afterwards.

My goal is to work out every night. Drink two bottles of water during my workout. Shower, prep my food for tomorrow of what im going to eat then go to bed.

March 1st

Ate at 1am after workout. Went to sleep 1:45am. Woke up around 5:20am – 5:30am, had no dreams. Didn’t feel hungry. Began to finish mth hw for today and play a game on fb. Accidentally almost finished off a lemon drop piece of candy but caught myself and threw it away then gave the pack to my sister. Got dressed. Ate grapes on the way to school, 8:30am. Resisted the urge to buy snacks during class break. Left class a little after 10:55am. Resisted my mom’s offers to eat out (Wendy’s, Mcdonalds, Chinese, Red Lobster). Went to the dollar store. Got home around 12pm at chips with grapes and rotisserie chicken. Looked at houses in my area online. Ate m&ms and fruit snacks. Read tips about exercising while using the bathroom (helpful), Went to sleep around 2:50pm. Woke up 6pm. Began washing clothes. Read the bible while washing clothes and learned about Adam/Eve, god confusing the language, his gift to Noah. Ate some cantaloupe. Finished washing around 9:30pm. Started playing fb game until 10:30pm. Start BIO hw. Finished at 11:52pm. Feeling hungry but I think my tummy is used to over eating because I ate two hours ago so I will pass and drink water finish up my hair and exercise. Quick blog entry. Went to bed at 2am.

March 2nd

Woke up around 5:50am to my niece crying. Was going to wake up 6am. Started braiding my hair then remembered to sew a button back on my coat. Finished that then finished up my grocery list  7:13. Made up bed. . Then Prepped meals for today. Made the oatmeal with grapes but I’m not familiar with making oatmeal and it came out watery so I only ate the grapes (8am). Did Oil pulling and drunk spoonful of apple cider vinegar. Showered. Did a small workout with squats, wall pushups and wind mills. Dressed Ate some of mom’s spaghetti with grapes (10am). Went grocery shopping for list of food on the side (12pm-12:47pm) Went to work (1pm). Ate peanut butter sandwich with whole wheat bread (3:50pm). Tried to call sears but no one answered. After work (5:30pm) went home and changed clothes. Ate some water melon with beef jerky. I attempted to make a yogurt granola parfait but failed, the plain yogurt I used was disgusting, tasted like sour cream. Tempted by my mom’s offer I ate a wendy’s jr bacon sandwich. Went to the casino with my mom, they don’t serve water so I had 2 small cup pepsi’s. Went home are 12am, had some beef jerky. Then had some French white bread and tea. Went to bed around 1am.

Healthy Diary Logs Begin!…Weight Loss & Exercise

Well this has been a journey in the making for a long time and I’ve finally started it the way I want to and no one else. I’m not following anyone’s plans or schedule, I’m doing what I think is best for me through trial and error.

I’ve started by changing my whole grocery list and purchased fruits, veges, granola and poultry, salmon. So in my Healthy Journey section it will be purely updated probably everyday with how my day goes, my schedule..everything I do and eat through out the day. I’m doing this so I can see my patterns and see for myself, what I need to change and tweak. It also keeps me on track and busy which will probably prevent me from being bored.

My goal really is to live my life eating healthy. I don’t want the junk food anymore, I want to go to the doctors in confident and hear them say,”You’re as healthy as an ox.” I’d  also like to go to the doctors and show up with some weight loss. So wish me luck and pray for me :).

Cinnamon-Baked Bananas

Today’s dessert – Cinnamon-Baked Bananas – is no exception.  I tore this recipe out of Shape magazine months and months ago…  It seemed like a great way to treat myself with minimum effort using ingredients that I pretty much always have on hand.

Leaving the banana in its peel, I cut through the fruit lengthwise, leaving the bottom peel intact.  I also made two small horizontal slits at the top to make opening the fruit a bit easier.  I pulled the sides of the banana apart, dotted it with 1/2 teaspoon of butter, and then sprinkled it with 1/2 teaspoon of brown sugar and 1/4 teaspoon of cinnamon.

To cook it, I closed the banana and wrapped it in foil.  I put the foil packet directly on my center oven rack and baked it at 400F until it was hot and soft (10 minutes).  I (carefully) removed the foil, opened the banana, and enjoyed my treat!
